Ingredients:
- Bone-in Chicken – 1.5 kg
- Cooking Oil – 3 ladles of 3oz each (Total: 9oz)
- Salt – 1 tbsp
- Ginger-Garlic Paste – 1 tbsp
- Chopped Green Chilies – 1 cup
- Ginger Julienne – ¼ cup (50 grams)
- Garlic Water – 12oz
- Tomatoes – 10 (Trim the top and cut in half)
Procedure for Backup Preparation:
- Heat 3 ladles of cooking oil (9oz total) in a full Karahi.
- Add 1.5 kg bone-in chicken and fry until golden brown.
- Add 1 tbsp of salt and stir well.
- Add 1 tbsp of ginger-garlic paste and stir to mix.
- Add 1 cup of chopped green chilies and stir.
- Add ¼ cup of julienned ginger and stir again.
- Pour 12oz of garlic water and let it cook.
- Add 10 halved tomatoes and stir gently. Cover with a lid.
- Remove the lid and stir gently.
- Remove softened tomato skins one by one.
- Mash tomatoes with an iron spatula to create a paste.
- Stir well to mix evenly.
- Let simmer until chicken is half-cooked.
- Set aside – backup is ready for final preparation.

Full Karahi (Per Order)
1. Portioning:
- Use 16–18 pieces of cooked chicken.
- Add adequate tomato mixture based on consistency.
2. Seasoning:
- Add 2 teaspoons of black pepper.
- Add 2 green chillies, each cut into 6–8 pieces.
3. Cooking & Mixing:
- Stir to combine spices and tomato mixture.
- Cook while gently stirring to keep chicken whole.
- Shake the karahi to distribute masala as gravy thickens.
4. Garnishing & Plating:
- Transfer to a Karahi Chaba (serving dish).
- Garnish with:
- Fresh cilantro
- Ginger julienne

1. Portioning:
- Use 8–10 pieces of cooked chicken.
- Add 4–5 serving spoons of tomato mixture.
2. Seasoning:
- Add 1 teaspoon of black pepper.
- Add 1 green chili, cut into 4 pieces.
3. Cooking & Mixing:
- Stir to mix tomato base and spices.
- Cook thoroughly while stirring gently.
- Allow gravy to reduce, then shake to distribute masala.

- Transfer to a Karahi Chaba (serving dish).
